Ingredients
- 2 large zucchinis
- 1 small red onion
- salt & pepper
- 1 cup chickpea flour (or red lentil), sifted
- 1 tsp baking powder
- olive oil
Method
- Coarsely grate zucchini and onion into large bowl. Sprinkle with
salt & pepper. Squish everything and rest for 5-10 min.
- Rub in flour. Sprinkle in baking powder. Should feel like pancake
batter.
- Tablespoon the mix into hot pan with oil. Flip when half done.
- Drain and serve immediately.
