Ingredients
- 1 onion, chopped
- several garlic cloves
- several chillis, chopped
- 1 tbsp garam masala
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 2 carrots, cubed
- 1 parsnip, cubed
- several cauliflower heads
- 1 zucchini, chopped
- 1 cup frozen peas
- several potatoes
- 4 tbsp Greek yoghurt (or coconut milk)
- 1 tbsp chopped coriander
- puff pastry or similar
Method
- In a large wok, start cooking the onion and garlic and chillis with
a little oil.
- Add a little water and the potatoes.
- When the potatoes soften a little, add the spice mix.
- Then add the carrots and parsnips. Add water as necessary.
- Then add zucchini.
- When all the veggies are soft, lower the heat and stir in the
yoghurt and coriander.
- Pour veggie mixture into pie tin. Mix in frozen peas. Cover with
pastry and bake for 20min or so.
