Meat variant
Ingredients
- 2 red capsicums
- 250g mince beef
- grated cheese
- cayenne, praprika, cumin, salt & pepper
- brown onion
- garlic
Method
- Cut capsicum in half, hollow out, and bake for 15 min.
- Cook up the mince with flavours and onion.
- Fill capsicums with beef, top with cheese, and bake for 10-15
min.

As above, replace beef with tin of mexican beens

- 2 green/yellow capsicum
- 1 tomato
- spinach
- 1/2 cup ricotta (maybe 1 cup?)
- 1 egg
- chili flakes, basil, italian herbs
- grated cheese, parmesan
Serve with e.g. sweet potato chips
