Ingredients
- 1.5 sweet potatoes
- 2 red capsicum
- 400g can of chopped tomatoes
- Garlic cloves
- Chilli powder, cumin, coriander
- Salt and pepper
- 200g bag of spinach
Method
- Chop the sweet potatoes into very small pieces. Chop capsicum into
pieces about the same size.
- Combine potatoes and capsicum and tomatoes in slow cooker and cover
with water.
- Once soft, add garlic, chilli powder, cumin, coriander, salt and
pepper. Simmer for an hour, stirring occasionally.
- Add spinach.
