Ingredients
Beef
- 800g casserole beef
- 1 onion
- 1 carrot
- 2 garlic cloves
- 4 bacon rashers
- 1 cup red wine
- Tin of tomatoes
- Rosemary springs
- Some olive oil
Dumplings
- 1 1/4 cups self raising flour
- 1/2 cup cornmeal
- 2 tablespoons chopped chives
- 2 teaspoons chopped rosemary
- 1 teaspoons chopped thyme
- 1 1/2 cups grated cheese
- 100 g butter
- 1 cup milk
Method
Beef
- Combine all of the ingredients in a mixing bowl. Transfer to slow
cooker and cook for 4 (high) — 8 (low) hours.
Dumplings
Preheat oven to 200 C.
- Combine flour, cornmeal, chives, rosemary, thyme and 1/2 cup cheese
in a bowl.
- Combine butter and milk in a small bowl.
- Combine dry and liquid ingredients.
Just before serving
- Transfer beef mixture to a casserole dish.
- Spoon over the dumpling mixture.
- Bake for 10 mins. Then cover with the rest of the cheese and bake
til nicely done.
