Swap out for gluten free flour blend (coconut, tapioca, rice) plus
lots of sugar (or substitute) to make gluten free.
Ingredients
Shortcrust pastry
- 250g butter
- 3 cups plain flour
- pinch of salt
- few tablespoons ice water
Filling
- Butternut pumpkin
- Onion, garlic, Worst. sauce, brown sugar, butter
- 4 cups fresh spinach, a little olive oil
- Salt & pepper, and available herbs
- 2 eggs
- 200g feta/goat cheese
- 1/2 cup walnuts and pine nuts
- 1/2 teaspoon nutmeg
Method
- Prepare the crust.
- Chop pumpkin and boil. Once cooked, mash till nice and chunky.
- Caramelise the onion+garlic mix.
- Saute the spinach, with a little salt and pepper.
- Mix the eggs and cheese. Add the nuts, pumpkin, onion, and spinach.
Season with salt & pepper, herbs, and nutmeg.
- Pour into crust and bake
