Spicy coating

In a mixing bowl,

  1. Add corn starch and rice flour
  2. Add cayenne, chili powder, cumin, garam masala, turmeric, black pepper, salt.
  3. Whisk all the powders together.

Sauce

In a small bowl,

  1. Add vinegar, ginger, onion, chives, chili powder, sambal

Chicken

  1. Coat the chicken thoroughly and evenly.
  2. Drizzle with little oil and bake at 200 for 15 minutes.
  3. Turn chicken pieces and brush on ginger oil (on one side).
  4. Continue baking at 200 for another 15 minutes.
  5. Turn and let rest for 3 or 4 minutes. Should be nice and crispy.
  6. Serve with sauce, either mixed in or on the side.

Ginger oil

  1. Combine the oil and ginger in a ramekin.
