Ingredients
- 1/2 large cauliflower (or 1 small head)
- curry powder
- olive oil
- salt & pepper
- 1 cup quinoa
- 1 cup lentils
- spinach
Dressing
- 1/4 cup apple cider vinegar
- 1/4 cup lemon juice
- 2 tsp minced garlic
- cumin
- turmeric
- salt & pepper
Method
- Coarsely chop the cauliflower. Roast with curry powder, oil, salt
and pepper (1/2 hour).
- Rinse and boil quinoa (10 min).
- Rinse and boil lentils (30 min).
- Combine dressing ingredients.
- Combine spinach, grain, cauliflower. Toss in dressing. Serve.
