Broccoli Cauliflower Bake

Method

  1. Turn the oven to 180C. Start baking the bacon (alternatively, fry). Prepare the stock.
  2. Melt 2/3 butter in a large pot on medium heat. Add garlic and cook for 1 minute. Add half the flour, stirring constantly. Pour in half the milk. Once nicely mixed in, whisk in the stock and rest of milk. Salt & pepper to taste, with a little paprika.
  3. Once sauce has thickened after a few minutes, take off heat and stir in cheeses.
  4. Combine veg and sauce in casserole dish. Layer with chopped bacon.
  5. [Do this only if sauce is too thick] Melt remaining butter and whisk in remaining flour with a little olive oil and water. Pour over top of casserole dish.
  6. Bake for 20-25 min until golden.
