Ingredients
- 1 eggplant
- 3 tbps tahini
- 3 tbps olive oil
- 4 garlic cloves, finely chopped
- 1 tsp ground cumin
- 1 lemon, juice of
- 1 tsp cayenne pepper
- salt
- 1 tbps chopped parsley
Method
- Roast eggplants till very tender. Cool.
- Scoop out eggplant flesh and add to food processor.
- Add rest of ingredients. Zap till nicely blended.
