Ingredients
- 3 red capsicum, coarsely chopped
- 500g haloumi
- 1 cup green olives
- 1/2 cup basil leaves, coarsely chopped
- 3 bunches asparagus
- 2 tbs olive oil
- 1 tbs vinegar
Method
- Grill capsicum till nicely charred. Transfer to bowl and cool for 5
minutes. Add olives.
- Whisk oil, vinegar, salt & pepper in a jug and add to
salad.
- Toss to combine. Sprinkle with basil.
- Grill asparagus until just tender.
- Grill haloumi until golden.
- Add asparagus and haloumi to salad.
